本集聚焦春節期間的「食」尚新課題。過年圍爐的傳統溫馨,也有著大魚大肉背後隱藏的健康與環境矛盾。本集特別邀請台灣全民食物銀行協會常務理事古碧玲女士,帶領大家在新年第一天,學習如何吃得剛剛好、吃得低碳又永續。

當食物浪費成為全球第三大碳排源,食物從生產、運輸到餐桌,若被浪費,其整體的碳排放量驚人,相當於全球第三大碳排國。更令人心驚的是,全球有許多人面臨飢餓,而人類浪費掉的食物量,足以餵飽這些人的三倍。

餐桌上的 3R 革命:從採買到全食利用 為了減少佔比高達 60% 的家庭端食物浪費,節目中提及 「3R 原則」:
• Reduce (減量): 採買時別被折扣誘惑,若吃不完反而浪費了 ,應依家口數適量購買。
• Reuse (再利用): 善用剩餘食材,例如將剩餘的滷肉汁轉化為其他菜餚的佐料。
• Recycle (再循環/全食物): 實踐「全食物」飲食。胡蘿蔔皮可醃漬,蔥綠與蔥白應全部食用,甚至胡蘿蔔葉也能細切煎蛋,減少廚餘產生。

此外,推廣 「吃在地、吃當季」 能從源頭降低農藥依賴並減少運輸碳足跡。新年新氣象,讓我們從這頓年菜開始,不再因為「飢餓基因」而塞滿冰箱,改以「智慧採買」響應淨零碳排,用知識驅動更好的未來。
